Jacques Bollinger himself reconstituted it patiently, at the beginning of the 20th century, from over 50 differently owned plots! Today, Bollinger owns all four hectares of the legendary and iconic plot. La Côte aux Enfants 2015 is a wine destined for connoisseurs seeking out an unexpected wine from the Champagne region. This wine is surprisingly concentrated and powerful. To fully appreciate its unique style, bouquet and aromas, we recommend serving La Côte aux Enfants 2015 at 16°C. 100% Pinot Noir from “La Côte aux Enfants” in Aÿ. One third of the harvest is vinified in whole clusters. A very small production dedicated to the greatest vintages.
Vinification in the traditional Burgundy style. Aged for eight months in small old oak barrels.
A warm garnet colour. On the nose it shows spicy notes with intense aromas of elderflower, black cherry and blueberry. On the palate could be sensed liquorice and black fruit flavours, rounded out by a great tannic structure. Perfect combination with veal in red wine sauce, fillet of beef with shallots and red wine sauce, poultry and duck.
